SA Smoky Bay oyster with pickled apple and avruga caviar
Salumi misti – 24 months cured Fratelli Galloni prosciutto di parma, wagyu bresaola, olive mortadella, cinghiale salami, house marinated Mt. Zero olives and asiago D.O.P
Ravioli fatti a mano – ravioli filled with spinach and buffalo ricotta with nutmeg, burnt butter and sage
Pappardelle con ragù di cinghiale – wild boar ragù slow cooked with rosemary, chianti, garlic, carrot and pecorino sardo
Arrosto di maiale – slow cooked rolled pork belly with chickpea inzimino and salsa verde
Collo di agnello brasato – slow cooked Mt. Leura lamb neck with lemon, anchovies, soave, cavolo nero, potatoes and gremolata
Pesce alla forno – oven baked Cone Bay barramundi with Sardinian fregola, Coffin Bay vongole, cherry tomatoes, lemon and olive salsa
Tiramisu - traditional recipe, decadent and creamy, with flavours of chocolate and coffee mixed with a cocktail of sweet liquors
Chocolate assassin - flourless chocolate cake made with 70% cocoa chocolate, the texture of chocolate mousse and served with crème fraîche
