This will be a 5 course dinner with matching wines. Tim Cullen, winemaker & owner of Paynes Rise Wines, will present his wines and explain the techniques used. He & his wife, Narelle, specialise in small batch, complex, varietal wines produced from their north facing vineyard in Seville, 200m above sea level, with uniquely upper Yarra cool climate.
Andrew Wringe, Victorian State Manager of L'Atelier by Aramis Vineyards, will curate the wines for the evening. L'Atelier collects only boutique wines hand-selected from premium wine regions across the world. Inspired by the Ateliers (workshops) of 19th century Paris, the wines they represent are made by highly talented craftspeople at the top of their trade.
Featuring on the menu will be nasturtium with Fraser Island spanner crab, smoked salmon caviar & saffron broth; asparagus, pea & mint tart with cured egg yolk; beef short rib cappelletti; Diamantina wagyu beef with fennel & parsnip; and a chocolate & ricotta tart.
