We are hosting a Seafood Dinner with Ash Brothers Seafood, family owned Melbourne based wholesale seafood supplier since 1959.
This will be a 6 course dinner with matching wines. George Christou, second generation Ash Bros, will present each course and explain the origins of each sea creature and the method used to catch it, from line fishing to sustainable farming.
The wines will be curated by Vince Pignatelli, Managing Director of Winestock Victoria. First established in 1993 as Nelson Wine Co. & Prime Wines, Winestock Victoria stocks a variety of progressive wineries using different wine styles and grape varietals. Vince will present each wine and explain the philosophy behind each winery, the aroma & palate of each wine, and it's reason for pairing.
The night will include deep fried harissa Mooloolaba prawns, smoked salmon caviar, oyster cream and scampi caviar, bacala, scallops, prawn tartare, nduja sausage, Moreton Bay bugs, lobster, blue swimmer crab, prawn head bisque (all based on availability), and finishing with a chocolate and chestnut dessert.
