Polenta con funghi – creamy fine polenta, seasonal mushroom ragú with tomatoes, garlic, capers and Parmigiano Reggiano
Vitello tonnato – thinly sliced poached veal with creamy tuna dressing, orange, fried capers, Parmigiano Reggiano and olive oil
- Primi -
Pappardelle con ragù di manzo – Parwan Prime wagyu beef short rib ragù slow-cooked with carrot, garlic, oregano, porcini mushrooms, pinot grigio and Parmigiano Reggiano
Ravioli fatti a mano – handmade ravioli filled with truffles, leek, roasted butternut, Parmigiano Reggiano with burnt butter and sage

Pesce al forno – oven-baked Spring Creek barramundi with spinach, saffron, cannellini, olive salsa
Arrosto di maiale – slow-cooked rolled pork belly with chickpea inzimino, silverbeet, salsa verde
Brasato di agnello – Mt. Leura lamb shoulder slowcooked with juniper berries, cloves, carrots, garlic, cavolo nero, potatoes and gremolata
